Peanut Butter Protein Crispy Rice Treats
These protein-packed treats will remind you of your childhood!
Feel free to substitute almond butter (or another nut butter of choice) for the peanut butter. You may also omit the protein powder if you don’t have any on hand.
**Peanut Butter Protein Crispy Rice Bars**
inspired by Alicia Silverstone’s recipe
3 1/2 cups crispy brown rice cereal (I like Erewhon)
3/4 cup brown rice syrup (agave, honey or a combination of the three works too)
1/2 cup peanut butter
1-2 scoops vanilla protein powder (chocolate, caramel or choc peanut butter would be wonderful too!)
chocolate chips, optional
pinch of salt
1. In a small saucepan, heat the rice syrup and salt over low heat until liquefied. Add the peanut butter and cook, stirring, until well combined and heated through but not boiling, about 5 minutes. Remove from heat and stir in protein powder.
2. Pour the cereal into a large bowl. Sitr the peanut butter mixture and chocolate chips , if using, into the cereal.
3. Pour mixture into a greased 8×8 inch pan. Press down with hands until mixture is evenly distributed. Let cool, and enjoy!
