Cinnamon Streusel Protein Cake

This is a delicious, moist, cinnamony, crumbly cake which is leaps and bounds better for you than anything from Starbucks. :)

Cake:

  • Cooking oil spray
  • 2 cups oat flour
  • 2 scoops vanilla whey protein powder (or two packets)
  • 3/4 teaspoon liquid stevia (or 3/4 cup Splenda granulated or 3/4 cup sugar)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 container nonfat plain Greek yogurt (about 3/4 cup–1 cup)
  • 1 cup unsweetened applesauce
  • 2 tablespoons canola oil (you can also experiment with coconut oil, macadamia oil etc)
  • 2 tablespoons water

Streusel Topping:

  • 1 tablespoon cinnamon
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/2 cup cup quick oats
  • 1 tablespoon butter (you can also try coconut oil)

Icing (optional):

  • 2 cups powdered sugar
  • 3 T. liquid (milk, water etc)
  • 1/2 teaspoon vanilla
  1. Preheat oven to 350°F. Coat a 13×9″ baking dish with cooking spray.
  2. In a large mixing bowl, combine the oat flour, whey protein, stevia, baking powder, baking soda, and salt; stir to blend.
  3. In a separate mixing bowl, combine yogurt, eggs, applesauce, oil and water.  Stir until smooth, then add wet ingredients to bowl containing dry ingredients; stir to blend just until uniformly moistened. Spread evenly in pan.
  4. In a small bowl, stir together cinnamon, brown sugar, vanilla  and salt. Add oats and stir to blend. Add butter and rub in with fingers until mixture is moist crumbs. Sprinkle evenly over batter, and use the handle of a wooden spoon to poke some of the streusel into the batter. (Poke it about 20-30 times)
  5. Bake 25 minutes; allow to cool before cutting into 12 pieces. Wrap individually in plastic wrap and store in refrigerator or freezer.
  6. Drizzle with icing, if desired.

Makes 12 servings

Per serving: 165 calories, 5 g total fat,  3 g dietary fiber, 4 g sugar, 10 g protein

    This sounds so good! I love the fact that it’s healthier too. I’ve tried the version from Starbucks (the MUCH unhealthier version), and I LOVE it, so needless to say, I’ll be trying this out! Thanks for the recipe. :)

    how many grams is one scoop of your protein powder? I’ve tried various types of powders and their scoops tend to be different sizes, I figured it would make a difference in a baking recipe!

    This does look fab! I’m with Katie, though, how many eggs? I’ve been looking for a breakfast cake recipe I can make when our company comes in a couple of weeks, but because I have to watch my carbs, I can’t exactly eat coffee cake. I think I could actually make this work, though!
