Avocado Yogurt Dip
I know, this looks a little like one of those silly food-coloring-infused foods you might see at a Halloween party. But it is completely au-naturel! The green comes from avocado and mint. I have to admit, I was a bit skeptical about this dip. But you guys, it is SO good! If you’re a fan of guacamole and yogurt, I promise you will love it!
½ cup plain nonfat yogurt (you could probably use Greek yogurt, but it will definitely add tang to the dip
2 T. fresh lime juice
1 T. mint leaves
1 garlic clove, peeled
½. T, salt
1. Place all contents in a food processer or blender and give it a whirl. Easy peasy!
Serve with veggies or whatever dipping device you desire! (We ate it with jicama sticks and blanched green beans).
I know that this dip sounds a bit unconventional, but I promise it’s good! I’m not usually a fan of mint in my food, but this is an exception.
