All Good Things {+ Some News}

Aaaaaand just like that, the weekend is over. Happy Monday!

Did you know that Friday was National Donut Day? I didn’t celebrate because 1) I’m not a huge donut person (I still need to get my hand on a cronut, though!) 2) I don’t own a donut pan, and 3) I’m 110% certain I couldn’t make a gluten free version myself.

I did celebrate National Cinnamon Bun Pancake Day on Saturday, though!

Okay, I totally made that up. According to this list, no day is dedicated to the buttery, soft, sweet, syrupy amazingness that is cinnamon bun pancakes. Talk about tragic. They totally deserve their own day! I did, however, dig into a stack of cinnamon bun pancakes Saturday morning. And I’m not making that up.

Ingredients
  • ⅓ cup oats
  • ½ scoop cinnamon swirl whey (or vanilla)
  • 2 egg whites
  • 1 T. coconut flour
  • ½ t. baking powder
  • 1 T. Greek yogurt
  • 2 T. applesauce
  • 1 T. almond milk
  • ¼ t. cinnamon
  • 10 drops vanilla or cinnamon stevia

Instructions
  1. Mix ingredients for the pancakes in a blender.
  2. Use your MASTER pancake-cooking skillzzzz!

 

Those pancakes may have been my favorite meal all weekend, however they had some serious competition.

Oh, hello, ooey gooey grilled cheese!

I ’m probably the only 27-year-old nutrition student and wannabe foodie who eats grilled cheese sandwiches with carrots and ranch dressing dip. This is embarrassing.

But in my defense, the bread was whole grain; the cheese was organicand the dressing was made with Greek yogurt.  Does that redeem me as a healthy living blogger?

Actually, don’t answer that. ;)

The very very best meal I ate over the weekend, however, happened Friday night, when I met my high school bestie (and bride-t0-be) at Barbacoa for a two hour gab, gossip and wedding planning sesh (the big day is just two weeks away!).

Barbacoa is my favorite restaurant in Boise for multiple reasons.

1) An absolutely GOOOORGEOUS location.

2). Servers accommodate strange drink orders.

I asked for a mojito made without sugar, extra lime, and light alcohol. Because one drink is more than enough to do this lightweight in for the night. ;)

3). Guacamole carts (and guapo guacamole-makers) are wheeled to your table.

4). The serve up the largest, most succulent shrimp ever.

You may remember me ordering it a few months ago when I visited Barbacoa with my dad. I may be mistaken, but I think they were even bigger this time around. ;)

Okay, so we didn’t order dessert this time, but I tried Barbacoa’s fried ice cream pops last summer, and they were absolutely incredible.

Katie and I had some major catching up to do because we hadn’t seen each other since December. I’m the maid of honor in her wedding, so I’ve been busy planning bachelorette festivities the past few weeks. I love this girl so so much. Even though we’re not able to see each other very often, when we get together, it feels like we never spent a minute apart; we’re able to pick up right where we left off!

I feel so blessed to have her in my life, and can’t wait to celebrate this huge milestone with her. Montana barn wedding, here we come!

Saturday morning kicked off with an early easy four mile interval run.

But the running didn’t stop there; I ended up running errands all day. ;) The highlight was hitting the farmer’s market for fresh produce, where I also managed to snag a few samples…

and a pretty awesome lunch.

Tilapia tacos! These were made with fresh-caught tilapia, salsa verde, queso fresco, and cilantro. The only thing that could have possibly made them better would have been a healthy helping (aka: huge blob) of guacamole. ;)

Later that evening, I enjoyed my weekly ice cream fix. However instead of going out, I opted for a more intimate experience with Haagen Dazs.

So indulgent. So worth it.

I bought this new-to-me flavor a few weeks ago, and now it’s all gone. Sigh. I guess all good things must come to an end. But only for the time being. I will definitely be buying another pint soon!

Another good thing that must come to an end, but only for the time being, is….this blog.

Okay, not really an end…more like a vacation.

Over the past three years this space has become my creative outlet, my baby…my love.  Sharing my life —eats, workouts, pins, crazy rambles and all—-with you brings me insurmountable JOY. More importantly, though, are the connections and friendships I’ve made in the blogging community.

These friendships are true blessings.

However I’ve realized that this summer, I need to focus on the things and people who need me most right now, where I am right now; I need to spend more time making long-held dreams become reality; I need to refocus, re-prioritize, rest, grow, pray, and simply LIVE more life away from the computer screen.

But only for a few months. I can’t imagine life without you guys! The blogging community makes me complete. Your comments, tweets, and emails bring huge smiles to my face every single day. Writing, sharing, and cultivating friendships here is my passion!

Which is why this will merely be a break. I promise I’ll be back. With 110% certainty.

Unless, that is, Prince Charming comes galloping to my door, swoops me off my feet, and we elope in Fiji. If that happens, I might not return. ;)

Initially I considered taking acomplete break, but the thought of disconnecting completely made me want to cry a river! So instead, I’m merely going to scale back.

Deep breath. I can do this.

So here’s the plan: instead of posting three times/week, I’ll pop in once or twice during the months of July and August, and then return to regular blogging in September.

When I come back full time, I’ll likely be living in a new apartment (in a new city!), and embarking upon a new journey.

Even though I won’t be blogging regularly this summer, I will be popping into Twitter and Instagram, and sharing recipes and workouts on a regular basis. If you have an IG account, please please please stay in touch with me there? And if you don’t have an IG account, please please please get one right this second, so that I can keep telling you you how much I love you.

No words can describe how difficult this decision has been. Blogging brings me infinite happiness, and sharing in your happiness is something I value so so much. For those of you who blog, don’t worry; I’ll still be stopping by your blogs from time to time to gawk over the amazing food you create and the inspiring lives you lead. :)

I PROMISE I’ll be back to say hi in July…and back back for GOOD in September. Just promise me you’ll still be here?

    All your photos are so filled with joy and effortlessly translate so much of your incredible spirit and joie de vivre! My email was acting up- Im not sure if you got the last one I sent- but- just have faith in what feels right for your life right now gorgeous girl :) I also went on about how much I loved the great gatsby! Ooh I eat a lot of butter, I don’t really think of myself as a healthy eater lol- more of a quality dining enthusiast ;) but I do love goose fat potatoes- it’s organic local goose fat if that helps lol. I’ve eaten so well this weekend- since the sad news everyone around me has taken a carpe diem attitude- we enjoyed an amazing spread of hummus, fresh pita, olives, baba ganoush, and a bit incongruously spinach and ricotta pastizzi (that’s a Maltese pastry- so delicious- I’ve loved them since I was little!) plus beautiful ayran at a Turkish restaurant that was particularly lovely and fresh. Also an amazing amaretto dark chocolate torte with Marsala and vanilla gelato -plus that pasta Lucas made! Barbacoa looks fabulous- what a feast- and what creative desserts! Take me some time- I will devour those giant prawns with you. Ooh and I haven’t been running (you are superwoman!) but I did run around on the beach with my family and Lucas- I can still cartwheel! I probably made myself a bit dizzy lol- finding my joie di vivre! Go be free lovely girl ;) much love Sophia

      Oh, Sophia, I just adore your approach to eating and living! “Quality dining enthusiast” <—love that! I truly believe that eating with passion leads to emotional and physical health, so in a sense, you are a healthy eater! ;) Goose fat potatoes sound incredible! I've tried duck fat potatoes, and they were by far the best I've ever had. Crispy on the outside, soft on the inside…ahh, bliss. They may not be good for the heart, but they're definitely good for the soul!

      My goodness, your dining escapades never cease to amaze me! I can not WAIT to dine with you in Italy next summer! I'm so glad to hear that your family is savoring wonderful meals together – I'm sure the love around the table is helping your papa fight and heal. <3 I'm praying for him.

    Oh no!! Now I have a reason to actually go on Twitter, haha. I think blogging can be very time-consuming, so it’s important to take a break every now and then. I will be going away for most of August but, unlike last year, I will not be posting from afar! I’m already looking forward to the break.

    And I’m impressed that a pint of ice cream lasts a few weeks in your house! Ice cream doesn’t last more than 24 hours in this house!

    Oh wow those cinnamon roll protein pancakes look good! I ended up inadvertently celebrating national donut day..I didnt even realise it was haha!
    That restaurant that you dined out on Friday looks amazing though – I agree the location is beautiful and that dessert looks amazing even though you didnt get to try one this time round :)
    All of my sweet treats could totally discredit me as a healthy living blogger haha – I guess its all about balance though! Would you believe I’ve never had grilled cheese!! :O
    I only blog a couple of times a week and with being quite new I don’t really wanna take a break yet,, but I’m sure there’ll come a point in the future. I’ll miss you though!! Have to keep in touch, I’ll make sure to keep popping up on IG!
    I’m not going to HLS as obviously its a bit far for me being in the US boo hoo :( I’m planning on just relaxing over the summer though and then obviously going off to Rome eeek! :D

    Aww lord knows I will miss your regular blog posts, Sara but I completely understand and respect your decision to scale it back- real life should trump blogging! Lately I’ve noticed myself getting into a blogging funk and rather than fight it like I would in the past, I’m just rolling with it- some weeks that might mean posting 3 times a week like I have been doing, or once if I’m busy or life gets in the way…right now, making life happen and spending time with
    my friends & family comes first.

    Love the sound of that Haagen Dazs flavor…mmm! It sounds like a worthy contender to my favorite HD flavor Cookies ‘n’ Cream! As for the best thing I ate this weekend, that would have to be a Bengali meal last night- it was one big fat seafood fest followed by date & jaggery flavored ice cream!

    Aww I will miss your regular posts, Sara! I do love your view on the world. And you’ve definitely given me loads of great recipes and links :D But I completely understand about scaling back. It can get tedious and stressful to blog so often. And you don’t want it to be a burden to you.

    Ahhh Sara!! I’m going to miss you!! But, obviously I’ll be looking forward to your return…and meeting you in September, because I’m going to HLS too!!! :-D That definitely excites me!

    The discrediting meal: poutine. My habit of sharing a massive order of it with the boyfriend doesn’t really portray me in the healthiest light, especially because we tend to get either Mexican or Maple Bacon versions.

    I haven’t taken a break from blogging yet, but I’ve only been at it for 11 months so who knows what will happen in the future?

    Best thing I ate over the weekend: the vegan, organic gluten free chocolate coconut cupcake I ate at Kelly’s Bake Shoppe when I went with Chelsea over the weekend. Seriously amazing!

    I think it is so awesome that you’re taking a bit of a blogging break. I’ve thought about doing the same thing, but blogging has too firm of a grasp on me. :P Seriously though, I think it’s so easy to get wrapped up in the internet and forget to live. I struggle with that balance all the time – so I think it’s smart to force yourself to take a step back from the internet every once in a while. That being said, I’m going to miss you!     Mmm yes, I love a good grilled cheese sandwich. Also I love Caesar salad. Not the kind that’s lightly dressed with an oil based dressing, but the kind loaded with creamy dressing with real bacon, Parmesan, and oily, garlicky croutons. Not at all healthy, but so darn good!

    Best thing I ate this weekend was a dulce de leche cupcake from my work when I took Sam there!!

    Ahh HLS. I’m so torn because I want to go SO bad, but I’m nervous about going because I will have just started my internship. I’m going to decide by tomorrow.

    Bahah if I counted up all the national holidays you make up it would be a ridiculous number, I love it. ;-) There certainly should be a National Cinnamon Roll Pancake day though.

    I know how many exciting things are in the books for you, and I know this little break will just help your focus on all the wonderful things in your life.     I’ll miss you dearly — but, that said, I can totally see where you’re coming from with this. It’s important for you to take time and prioritize your time and energy towards the big things going on in your life. School, a new job, and a new city are big — nay, huge — changes, and they demand a lot of attention! Scaling back for a few months and then ramping back up in the fall makes perfect sense. I’ll miss you like woah, but I’ll be sending you huge hugs and happy thoughts during your hiatus!

    Obviously, I think it’s great that you’re taking a bloggy break for yourself! That’s the most important thing!!
    I definitely consider it from time to time, especially when things get a little crazy, but for some reason I never follow through. Maybe when things get a little more busy – which I’m pretty sure they will soon. But, who knows! I do love blogging a lot, but sometimes I feel obligated to post instead of posting when I have time or when I want.
    I think everyone needs a break at some point if they’re blogging. Sometimes all the exposure can be a little much. I just want you to be happy with your decision and that’s all that matters!
    Obviously, we’ll keep in touch in e-mail AND I’ll see you at HLS!!! I’ve booked my plane ticket, but the only thing I’m nervous about is flying. Heck, I’ll just e-mail you back so we can discuss!! :D :D

    Oh and I guess this means I need to start getting better at twitter and instagram ;) I always suck at that part of social media.

    There are so many foodie blogs out there, but there are a handful that I enjoy reading the most and yours is one of them! I have taken over a month off of blogging now to focus on other things and it feels so strange yet liberating. You have such exciting things going on from being a maid of honor to moving to a new city! I wish you all the best and have a great summer! I’m looking forward to your first post back! :) Also, i must confess that I drooled over every eat in this post (especially the pancakes, grilled cheese, and guacamole). I love when guac is made fresh at your table. I could probably down the sharing bowl all to myself!

    So..I am pretty much teary eyed after reading this post! I am so sad you are not going to be blogging frequently because I LOVE reading your posts, LOVE imagining you in real life (would LOVE to meet you) and just love your recipes! I am happy you will still be on IG (already following :) ) so I can at least stay some what in touch! PLEASE please PLEASE come back!

    I have been tempted SO many times to let go of my blog, to just delete it and say goodbye but for some reason the times I start to do that and let go of it someone comes along and says how much my blog helped them and it keeps me driven. I had a hard time with my schedule for so long keeping it up and keeping new posts flowing was just INSANELY difficult and plus life is just to short to spend it in front of a computer ALL DAY Long researching + inventing but it is what I love so I will stay…

    As for you missy, you better come back! The blogging world will miss you too much! Sending you lots of LOVE and hugs for your next chapter in life! I know so many wonderful things + a prince charming are coming your way! It all happens when you least expect it, promise!

    I think it is great you are taking a break, you have lots going on and blogging would just add too much stress, when blogging becomes stressful, that means it is time to take a break for sure. I am so excited for the new changes for you though and new place soon, yay!!!! Baby G and I will come visit!

    I’ve never taken a break from blogging but I only post once a week and that seems doable.
