A Cake and a Countdown

Howdy, hello, and how are ya?

The weekend is finally here, and I’m feeling pretty pumped…


about pumpkin!


Sorry, I couldn’t help it! I think it’s safe to say that I just penned the #1 contender for corniest post introduction ever.

Since it’s Friday–and only because it’s Friday—please forgive me? Please?

What I’m trying to say is that right this second—as I type this post—all I can think about is this pumpkin pie cake.


Holy cow it’s good. Like I-think-I-need-to-make-another-one -right-NOW good. Protein mug cakes were all the rage when I started blogging back in 2010, but honestly, I never quite understood the hype. They were healthy, sure, but a bit too rubbery for my liking.

This mug cake is so completely different! What I love most about it—besides the fact that it tastes exactly like pumpkin pie —is that it contains nothing but simple honest ingredients. Pumpkin puree. Eggs. Cinnamon. Greek yogurt.


It’s a mini-sized snack moonlighting as a dessert that’s a little bit indulgent but a whole lot delicious. If you’re looking for a healthy treat to try, I highly suggest you make it.

Single Serving Pumpkin Pie Cake
Prep time

Cook time

Total time


Recipe type: snacks, desserts
Serves: 1

  • ½ cup pumpkin puree
  • 1 egg (or 2 egg whites)
  • 2 T. oat flour (or 3 T. oats)
  • ¼ t. pumpkin pie spice
  • ¼ t. baking powder
  • 2 packets stevia (or sweetener of choice)

  1. Combine all ingredients and blend in a blender or Magic Bullet. You can also mix by hand, if you’re using oat flour.
  2. Pour batter into a greased mug or small baking dish; Microwave for 2 minutes.
  3. Create a “frosting” but combining Greek yogurt with sweetener, and cinnamon. (Not optional! 😉 ) Sprinkle with walnuts (optional, but highly recommended).
  4. Note: I also added cinnamon cream cheese to my frosting (see below for details), which made it even more decadent and delicious!

Let’s kickstart the weekend with a little countdown of sorts, shall we? Five…four…three…two…one…Go!

FIVE Packaged Foods I Ate This Week

1. Hope Organic Sweet Potato Hummus.


One of the perks about being in Boise the past few months has been the fact that I have unlimited access to this Denver-based dip devil. And by devil, I mean that this stuff has me under its spell. Like, I can’t stop eating it. If you live in the West, search for it at Whole Foods!

2. Brown Rice Cakes.


Diet food? Heck-to-the-no. I think rice cakes are completely misunderstood and underrated. They’re a perfect canvas for just about anything. Take peanut butter and banana, for example…


Starry eyes. But this week, my favorite use of the good ol’ rice cake was pizza.


Fun childhood throwback! My mom used to make these for me when I was little, and this week I returned the favor and made them for her (what goes around comes around, eh?).


Three ingredients: rice cake, tomato sauce, cheese (I use an Italian blend which contains Parmesan, mozzarella, and smoked provolone).

3. Kale Krunch Quite Cheesy Kale Chips.


Aka CRACK in a bag. If real cheese isn’t your thing (and even if it is), this vegan crunch munch is totally worth trying. I’ve gone through five bags this week. You think I’m kidding, but I assure you I’m not.

4. Laughing Cow Cinnamon Cream Cheese.


Need I say more? Sure, you could add cinnamon and sugar to regular cream cheese, but there’s something super wonderful about being able to throw a pre-portioned wedge into my bag for on-the-go snacking. It’s also AWESOME in that pumpkin cake frosting. :)

5. Alexia Spicy Sweet Potato Fries.


I buy Alexia products regularly, but I hadn’t tried the spicy fries until Memorial Day. Holy hot heaven! So good!


FOUR Random Facts About Me

1. I am not at all shy. In fact, I love talking to strangers and make new friends when I’m out and about on an almost-daily basis. But when it comes to public speaking? Fuggetabouditt. Make me stand up in front of five people and I will shake.

2. When I was little, I loved having my feet tickled. Kinky! Who tells people that? I outgrew it in middle school. Or did I? Dun dun duuuuun. 😉

3.  I have really narrow size 9.5 flat feet. This makes it extremely difficult to find shoes that don’t fall off. It also means I can’t wear strapless flats or pumps. Yep, you heard me. I don’t own pumps. Strapped heels all the way, baby!

4. I know the secret to living a happy, fulfilling life.

2. 50 Cheap Date Ideas via Marie Claire Magazine. Love this one: “Play house”: Dress up in your most serious grownup outfit and  visit some open for-sale houses. Spend the day arguing in front of the realtor about where you would put the love seat, discussing the difference between eggshell and ecru paint, and giggling over strangers’ hideous decorating choices. 

Haha! Now I just need Prince Charming to do it with.

The 5-4-3-2-1 Workout.  I wasn’t in the mood to strength-train at the gym the other day, so I did this 15-minute workout at home. I was sweating at the end—after just 15 minutes! It’s a great alternative on days when you’re pressed for time, feeling gym-phobic, or simply want to mix up the routine.


TWO Things I Bought Yesterday.

1. Digestase-SP.  Definitely not glamourous, but these digestive enzymes have been a lifesaver. I take one before every meal, and my digestion is now a zillion times better. If you have tummy issues, I HIGHLY recommend them!


2. Lululemon Forme Jacket in Power Purple. I’ve had my eye on this for weeks, and finally caved. Darn you, Lulu!

ONE Summer Trip I’m Looking Forward To

1. Charleston! I’m heading to the sweet South, ya’all! I’ve wanted to visit Charleston for years, and finally the stars aligned Wednesday. Ticket booked!



If you’ve ever visited Charleston or live there, I’d love to hear your recommendations about where to eat and what to do!


I’m supposed to stop here, but I’m simply not ready to say goodbye for the weekend! I could chat your ear off for hours…Who wants to come over for a pizza party? Seriously though, how fun would that be?!  😉

    Those quotes are beautiful! I love how open and friendly you are Sara- it’s such an undervalued an beautiful quality. First off I can’t believe we have the same shoe size exactly- including the extremely narrow part! I find it hard to find shoes that fit well too. One package I have been eating a lot of is Amedei chocolate- it’s wonderful and full of emotion lol- the makers talk about the emotion of each chocolate and how they pour their heart into each creation- its an Italian thing- passione!. I am a rather outgoing person- I also have the weird ability to actually enjoy public speaking! I usually doubt myself before hand- but once I begin I feel very comfortable and kind of thrive- good thing to as it is an important part of being a lawyer :) That purple jumper is so sleek I adore the vibrant colour! I just indulged and bought organic vanilla perfume- I smel delicious lol. I would love to come over for a pizza night :) we can make a fabulous mug cake too (so intrigued I adore pumpkin!) and you can introduce me to laughing cow cheese! I do wish you could join Mr Bova and I for our impromptu movie night later- the restaurant we work at had a fire- the upside though is time off and so time together :) Have a passione filled weekend dear Sara!     YES about rice cakes- I’m obsessed and like you said, their versatility only adds to their charm! As much as I love bread, sometimes I genuinely rather eat the rice cake…as ridiculous as that sounds! I’m excited for us to meet soon! Like you I’m very chatty when I meet people buuuut just the thought of public speaking makes my face heat up and me want to run away- hate it but I am trying to work on it!

      I have sad news…It looks like London isn’t going to happen this summer. :( I’m SO SO bummed, but it turns out I’m going to be moving, which is an expense I hadn’t expected. Add in the cost of the flight, and it’s just not feasible. I’m so sad! BUT, I will definitely be in Europe next summer, and really hope you will be too! <3

    Love this, as always!

    First of all, I can completely relate to the paradox of being outgoing when in one-on-one situations, but hating public speaking. No one can understand how someone as outgoing and chatty as myself could be as terrified of public speaking (we’re talking sweating, shaking, palpitations, unable to speak without my voice quavering…the whole phobic enchilada), so I’m glad I’m not the only one! I can also relate on the shoe front: I’m a narrow 8.5, so shoes flop around like fish on me. Le sigh. :)

    As for packaged foods I’m lovin’ on right now, Trader Joe’s kale chips are high on that list — as is Udi’s GF granola. Lurve.

    We absolutely need to hang out when you get back to DC — something tells me we’d get along superbly! :)

I’ve been reducing my protein powder intake lately (my digestive system doesn’t seem to be loving it) so I’ll definitely need to put that together as a dessert one night soon. And brown rice cakes = love. I seriously need to have a stash of those at all times. I’ve never made pizza with them though, which obviously needs to happen ASAP.

    Rice cake pizzas??? That sounds amazing!! I love the crunch of a rice cake. I think that’s one of the main attractions for me haha. They look so cute as well.
    I always buy plain Philadelphia cream cheese on a regular basis. It literally goes into everything I eat. I love the creaminess and how it can go with almost everything. And plain popcorn that I pop myself. I have literally been stinking out our office with the smells of popcorn. No one has complained though – they all seem to like it hehe.
    I have got a lot better at being more confident with people I don’t really know. Being at work helps that a lot and joining the running club has definitely helped. It’s easier to chat to people though who are like-minded so I guess that helps! Public speaking I’m OK with as long as I know what I’m saying and have prepared. I used to do a lot drama back in the day so I’m comfortable with being on stage.

    I love rice cakes too… have never thought to do pizza style… did you bake them in the oven/toaster oven to get the cheese melty?

    OSh– gosh I could go on and on about packaged foods #achillesheel

    BUT in the interest of keeping it relevant (and also because I ate some last night with butter and jelly) I LOVE Suzie’s Rice Cake Thins.

    My favorite variety is the corn, quinoa and sesame but they also have brown rice only and are gluten free.


    Thinner rice cakes = more rice cakes per sitting = more room for TOPPER ACTION!!

    Okay, first off… I WANT THAT HUMMUS! My obsession/deep love for sweet potatoes is strengthening the urge to find that stuff; but alas, I have had no such luck :( and secondly….pardon the TMI, but my mom and I believe that I may actually have IBS – this diagnosis is coming after a long time of various symptoms that we had no idea WHY I was getting…especially since my diet is so, well, natural! Would you seriously recommend that digestive stuff? Love you girl! And ummmm….those rice cake pizzas looks ridiculously great -drool-

    Hmm packaged food I’m loving is sun warrior protein powder, coconut flour, butter, buckwheat flour (do those count – I guess since they come packaged), dark chocolate (obviously).

    Well I was going to start my comment with the pumpkin cake, but that’ll have to wait for a sec because the thing about playing house totally brought back some old memories. I’ve done that before… to an extent. We didn’t pretend to be shopping for houses, but for furniture – specifically, beds. We pretended to get into an argument about it, eventually bringing up some old affair, and I think we made the salesperson extremely uncomfortable. Ohhh, good times.

    Pinned that pumpkin pie cake! I’ve only tried a few mug cake recipes and I was disappointed every time, but this one looks perfect!

    I wish we had that Laughing Cow cinnamon spread here – we have Laughing Cow, but not that flavour. :( Some packaged foods I’m loving right now are President’s Choice Greek yogurt smoothie bars and some of my US finds like TJs coconut chips, Oikos toasted coconut vanilla Greek yogurt, and Blue Diamond coconut almonds.

    have you ever had pumpkin butter? I don’t know if I’m a pumpkin fan to begin with so it was kinda weird. Love the rice cake pizza though! :) I need to try that. does it not get soggy or super hard when you bake it for the cheese and stuff to melt?

    OMG rice cake pizza, that looks amazing!! I have been a big fan of Suzie’s corn, quinoa and sesame thin cakes lately. They’re nice and thin, so you get a bigger topping to cake ratio, and the flavour is so good! I also just tried laughing cow for the first time and I’m hooked!
