Friday Five and Crispy Kale “Tostada”

This is going to be fun and fast for two reasons.

1. My last post about balancing restaurant indulgences with clean eatingย  was a novel. I think we both need a word break! ๐Ÿ˜‰

2. I’m catching a plane in a couple hours and right now my suitcase containsย  just two things. Welp!

Oh heck. A swimsuit and flip-flops are all you need in California anyways, right? ๐Ÿ˜‰


THE FRIDAY FIVE (inspired by Christina!)

WHAT I’M PACKING: Forget the clothes! I need space for clean snacks! ๐Ÿ˜‰

These munchies will eventually make their way into my suitcase. ๐Ÿ˜‰

I’ll be traveling for four days, which means nearly every meal will either be eaten on-the-go or at a restaurant. To stay feeling my best, I always make sure I have a stash of clean snacks with me!

Nectar Sweets Grab n’ Go Whey Protein Isolate packs.

Blue Diamond 100-Calorie packs and Mauna Loa macadamia nut packs.

Quest Protein Bars: These all-natural bars contain 20 grams of whey protein AND 17 grams of fiber. Crazy.

Nu Naturals stevia packets. I carry these in my purse, in case I want to sweeten my coffee or tea.

1. Yogi Tea Ginger Tea. My all time favorite.

2. Optimum Nutrition Casein Protein: For the past three weeks, I’ve traded my before-bed whipped cottage cheese and peanut butterย  for vanilla casein! I turn the casein into “protein fudge,” just like this lovely lady. ๐Ÿ˜‰ It’s delicious topped with peanut butter or any nut butter. (And much easier to travel with, since it doesn’t have to be refrigerated).

3. Blackberry-Blueberry water enhancers: These Target finds are a win because they contain stevia instead of asparatame!

4. Artisana nut butter packs in walnut, coconut, almond and cashew.

2. WHAT I’M WEARING: Nike Free’s and Moroccan Oil.

Neon-blinding feet and shiny hair. ;)

Thank you so much for offering your advice regarding the Nike Free’s! I bought my first pair (color: hot punch) on Wednesday and LOVE LOVE LOVE them. Any shoe that makes treadmill running a joyful experience is a winner in my book. ๐Ÿ˜‰

Moroccan Oil is a lifesaver for damaged hair. It’s pretty darn expensive, but a few drops turn dry coarse hair into luscious locks. ๐Ÿ˜‰

3. WHAT I’M PINNING:ย  Pizza Cauliflower Bites and Avocado Soup with Coconut Milk.

Avocado and coconut milk is like peanut butter and jelly. Killer. Combination.

5. WHAT I’M EATING:ย Sometimes I prefer to get my antioxidants from chocolate.

(And crispy kale). ๐Ÿ˜‰

I’m officially in love with all four of the bars above. The top two I found at R.E.I., and the bottom two were Target snags. Whoever came up with the idea of combining tortilla chips, lime, salt and chocolate is my new best friend.

Sidenote: Has anyone else noticed that Target has become a gourmet chocolate shop? They carry everything!

Crispy Kale “Tostada” with Garlic-Roasted Shrimp, Goat Cheese, Avocado, Arugula and Red Onion. I was craving kale chips last night, but thought a “tostada” would be more fun. Instead of tearing the kale, I left two large leaves intact, spritzed them with olive oil, and baked as usual.

They made a deliciously crunchy base for my salad!


On a completely unrelated note…

Gabby Wins Gold!

Three cheers forย  little Gabby Douglas, who brought home the gold last night in the women’s individual gymnastics competition!


Gabby has an inspiring story, and she’s the first African American to ever win gold in her event. I couldn’t be happier for her!!

    So excited for Gabby Douglass too! She is amazing! Have a fantastic trip! I am dying to hear what you think of the quest bars! I’ve been searching for them but have yet to find them! They sound great though! That salad with crispy kale looks amazing too! I’m always looking for different ways to change up my salads so will have to try this!! Have the best weekend :)

      I LOVE Quest Bars! My favorite flavor is by far Coconut Cashew. I’d been searching all over too, and found them at the Vitamin Shoppe a few weeks ago when I popped in to buy protein powder. They’re pricey, but so worth it!

      I love Mo’s Bacon Bar!! I was so weary to try it, but it really IS amazing. My all-time favorite is the Wolloomoloo Bar, which is also made by Vosgue’s. Have you tried it? I hope you have a wonderful, low key weekend!

    California? Lucky girl! Have fun!! You are very thorough with your snack packing! I usually just stuff my purse with granola bars and call it a day :) I love the Lindt dark chocolate and sea salt bars – so good!

      Haha, I used to just stuff my bag with Luna bars, but found that I’d spend too much money on snacks once I arrived at my destination! I LOVE Lindt sea salt bars. <3

    I have never seen 100 calorie packs of almonds. What a great idea. I usually dump a few in a bag for trips, but this is even better.

    My sister and I are going to a 90s concert and dinner Saturday. Hanging out the boy on Saturday. A pretty relaxing weekend, which is nice!

      100-calorie almond packs are my favorite! They sell them at most grocery stores and Target–definitely give them a try; they’re super convenient!

    I really need to find Quest bars! I’ve been seeing them everywhere and they sound so delicious! Don’t you just love your Frees? I bought a pair about a month ago and they quickly became my new favorite running shoes. And the color “hot punch?” LOVE!

    There is so much in this post to love!! Where to begin? That Crispy Kale Tostada looks SO delicious! Using kale as a base instead of a tostada shell is such a great idea! Definitely trying that. I love all of your travel snacks! Is Nectar Sweets Whey Isolate good? I’ve seen it numerous times, but am always hesitant to try a new protein powder before sampling it first (I usually us ON whey). Those packets look perfect though. And those eCards!! Haha!! Too funny…#1 is true for me some days. ๐Ÿ˜‰ Tiramisu chocolate? Tortilla chips, salt and lime with chocolate? Crazy delicious! When I travel, I always have oatmeal packets, nut butter packets, whey protein and seaweed snacks!

    I love how prepared you are, girl! Having lots of snacks with me is super important when I travel; all that restaurant food can take a toll! In addition to lots of healthy munchies, I also pack hard boiled eggs (if we’re going to have a fridge). They’re a quick, easy source of protein that I can grab in the morning or for an afternoon snack. Best chocolate bar EVER (in my opinion): Lindt Sea Salt. Happy weekend!

    Crispy Kale Tostada? YUM! Those shrimp look perfect too! I love your travel snacks. I actually pack really similar things when I travel; I always have nuts to snack on, and Luna bars for breakfast or snacks.

    I’m a ginger tea lover too! Yogi is the best, for sure! I love the little messages. :) Those chocolate bars all sound amazing! This weekend I’m visiting my best friend in Tuscon–can’t wait! Safe travels to CA!

    Happy Friday!! Those are pretty superb travelling snack items. Heck yes to the artisana nut butters. Those are my favourite brand of nut butters everrrr!
    And you just so happened to pick out the top 4 of my favourite ones they sell:)
    I am seriously in love with your neon pink sneaks. I’m convinced I need to get myself a pair now.

    Love all your healthy snacks and am so proud of you for being so prepared…minus the packing only two items hehe. Tortilla, lime, salt chocolate? I’m very curious!! It’s like chipotle chips but with chocolate haha

    Oh I love those Pizza Cauliflower bites! Have a wonderful time in California girl. Can’t wait to hear all about it! :] I’ve never tried those nut butters yet, but have heard so many wonderful things about them. If only they sold them here in Kuwait!

    You are going to think this is the strangest combination ever. Whenever I was in third grade we had to do a project with incoporating chocolate into our favorite food. Well my best friend @ the time & I were obsessed with Cooler Ranch Doritos. So we made chocolate covered doritos. Sounds kinda gross, but surprisingly they were delicious!!

    I don’t travel too often, but I definitely prepare food when the only alternative is fast food. I generally stash some bars (Clif or Luna) and easy fruit (like bananas, apples, and grapes), and I seek out the Subways and Quiznos on the interstate. I don’t get too crazy with my planning. Usually, I end up in a place with a fridge and a microwave. The real struggles come with a hotel room that offers nothing but a coffee maker. I’ve had a chocolate truffle with cayenne. It was awesome. It wasn’t a brand, it was some special edition thing. But I loved it. I don’t like tea. I prefer coffee! =)

    Haha I love all those snacks you’re packing! Those must take up half your suitcase! ๐Ÿ˜‰ I tend to pack a lot of food too though. Soy nut butter, homemade granola bars, apples, almonds, cereal, crackers and hummus (if I have access to a fridge) are musts for me!

    Ok this post has convinced me to try Moroccan oil! I’ve been wanting to try it for ages, but I’m always iffy about the price. It sounds worth it though!

    Also that kale and shrimp dinner looks awesome! I looove crispy kale and all the other toppings on there too!

    Those travel snacks look amazing/perfect! Whenever I travel I spend more time thinking about the type of snacks I am going to bring on my clothes (oh how times have changed!!) I always bring Tera’s Whey single serving protein powders since they are sooo delicious, perfect travel size, and oh so cute :) I also LOOOVEEE bringing simply bars. They are so clean – I am sure you’ve tried them! They also just came out with chips too – they are delicious. Who doesn’t love chips? Hope you are having a great trip!

    i love how you get soo many different froyo flavors in the US we only have pretty basic ones. Plain and then sometimes some other fruity component added to it :(

        its beyond amazing to say the least. I love coconut!!! I live in Austria, all the way across the atlantic!! i love morrocan (spelling?) argan oil too.. it makes my hair super soft and the one I use smells heavenly.
