Cream, Crunches and Calories

by Sara on December 7, 2011

Okay, let’s start with a few confessions.

This post isn’t about cream.

However, it is about ridiculously creamy coffee.

This post isn’t about crunches either.

Although I think I’ve figured out the secret to a flat stomach. ;)

This post may be about calories…

But we’ll save the juicy stuff for the end.

And the title of the post…well, yeah, I really really like alliteration.

“Eggnog Latte, Running and How Much I Eat” doesn’t have quite the same ring, does it?

Didn’t think so. :)

I’ve received several emails from readers over the past month, asking me if I can go into more detail about what I eat on a daily basis.

My favorite quick lunch: chicken lettuce wraps

I usually prefer to highlight a recipe or product in my posts, because frankly, I think reading about my meals would be boooooring.

However, since I haven’t written a “daily eats” post is quite some time, and because I promised those who emailed me that I’d answer their questions, aaaand because it’s Wednesday…..

I’ll be sharing a full day’s worth of food with you. (Minus the many undocumented bites of this and that that occur regularly throughout the day) :)

Ready?

Here we gooo!

BREAKFAST

Actually, let’s back up 20 minutes. After I roll out of bed, I get my ticker ticking by doing a minute of jumping jacks and a minute of jump squats.

I know what you’re thinking: Caraaazy girl!

Well yes, I would agree with you. Especially before I start jumping. But once I’m finished, I feel fresh and semi-ready to begin my day. My jumping jacks are like my first cup of coffee.

But let’s not kid ourselves.

Now we’re talking business. Real coffee is a morning MUST.

Lately I’ve been enjoying my Godiva Chocolate Truffle with a generous dosage of So Delicious Coconut Nog. This morning I made an “eggnog”latte by steaming 1/4 cup eggnog and 1/4 almond milk, then adding about 1/2 cup strong coffee.

Silky. Smooth. Sweet. Delightful.

After caffeinating, I began cooking.

1/2 cup egg whites cooked in 1 t. Earth Balance + a Laughing Cow Garlic and Herb cheese wedge melted inside; Sauteed spinach and onions

I eat a variation of this breakfast almost every morning. Eggs are one of my favorite sources of protein because they’re versatile and satisfying. Plus they fill me up without weighing me down. For some reason, oats an other fibrous grains, sit in my stomach like a rock!

And because every meal should end with something sweet, I finished up with a pumpkin protein bar.

After fueling, I scurried on over to the gym, where I banged out 8 miles of interval running on the treadmill.

Just a month ago, running 8 miles would have been impossible! However building my muscle mass through heavy weight lifting has increased my stamina.

blurry iPhone pic

Today, the latest issue of Oxygen Magazine was one heck of a motivator too. ;)

I’ve also noticed that despite gaining a few L-bees (see below), my tummy has flattened out. In the past, Id do 100 crunches/day and saw no change in my stomach! Running has done wonders to that area of my body!

POST-WORKOUT/LUNCH

Serious refueling was definitely in order..

Part 1: Cheesy Zucchini Rice Casserole (recipe coming soon!)

Part 2: Roasted Brussels Sprouts straight from the pan (leftover from last night)

Part 3: Arctic Zero Vanilla Maple (protein ice cream)

Part 4: 1/2 Clif Mojo Bar

Before class, I ran a couple of errands, and came across these lovely sparklers. Can you guess where they’re from?

Payless.

You just can’t beat a $24.99 sticker tag.

Unfortunately my size wasn’t available, but they are available online, so if you want to flaunt some serious foot bling on New Years Eve like me, you can  order them here.

After lusting over shoes that twinkle, I headed to my last class of the semester!

SNACK

I nibbled on another pumpkin protein bar during class, but was embarrassed when I realized that half of it had turned into crumbs in my lap. Ooops. The other bar was eaten during break.

DINNER

Kidding! ;)

However, I did enjoy the last of my very favorite cookies (baked for party last weekend) while my real meal cooked.

salmon burger + spinach sauteed in Earth Balance

NIGHTTIME SNACK

The battle of the “eggnogs!” (Clearly I’m obsessed). ;)

Any guesses which won?

And, of course, my typical nighttime snack, whipped cottage cheese topped with peanut butter, TruWhip and Udi’s granola, served with a side of Lucky Magazine fashion advice.

*Sidenote* I’m so happy Jessica Simpson has made a return! She may not be known for being the brightest cookie in the world, but after the media maliciously scrutinized for her weight, she’s owning her body, and showing the world that you don’t have to be rail thin to be successful. Go girl!

Oh, and on that note…

Since we’re talking about weight…

A few months ago, I set out to become a muscle mama. Since then,  I’ve gained 5 pounds.

And I feel the best I ever have.

How did I do it? Weight lifting, interval training, clean eating (except for occasional fro yo and cookie splurges, of course!) and increased calories.

As I mentioned earlier, I’ve received a number of emails lately requesting more information about how many calories I eat on a daily basis. In the past, I’ve avoided the subject on Nourish and Flourish because it’s seemed like a taboo topic.

And it’s certainly a touchy subject in the “healthy living blog” community, where “calories” are like an elephant in the room, especially in posts like this one, that chronicle a days worth of eats.

We live in a society in which the calorie is a measurement of willpower and integrity. A society where less is more. A society that tells us implicitly and explicitly that calories equal poison and we should limit them at every opportunity. A quick stroll through the grocery store turns up low-cal versions of nearly everything, from mashed potatoes to oatmeal to dressing to cookies.

What happened to eating food in its natural form, and savoring the energy it was intended to offer? Why don’t we celebrate the blessing that we have food to eat, rather than shun it?

Today I’m celebrating the fact that I have a strong body that requires about 2200 calories each day. I’m also celebrating the fact that that number is not a measure of my self worth. :-)

****

Okay, it’s time for me to tackle the last paper of my semester! Next Tuesday I’ll be a free woman, and I’ll be celebrating with Katie in New York City!

Catch ya from the Big Apple!

Who is your favorite “healthy” celebrity?

Do you ever nibble on dessert while your dinner is cooking?

Do you feel comfortable discussing calories on your blog/in conversations?

  • http://mindrunningwild.wordpress.com/ mindrunningwild

You go girl!! I can’t believe how much of competition around caories and exercise still goes on in the blog world. I don’t think I can discuss calories in my blog until I am mostly recovered. I don’t want to set any sort of example for others, as my recovery is my own.
I hope to get to a point where I believe my body can “tolerate” and deserves more calories. I don’t know how to change my mind, but I suppose blind faith will have to do for now.
    you inspire me :)

  • http://www.cinnamonbums.wordpress.com Natalie

Wow, this is an amazing post, Sara. Thank you so much for reminding us that calories are truly trivial in life. We worry about numbers that really don’t mean anything in the big picture!

I love the idea of making an eggnog latte! I need to try So Delicious coconut nog–sounds amazing! And your nighttime snack looks soooo good as well.

One of my favorite “healthy” celebrities is Christina Hendricks. She flaunts her curves and looks gorgeous doing it!

  • Katie

I love all of your eats! Especially that cheesy rice casserole. Can’t wait for the recipe!

I think my favorite healthy celebrity is Jennifer Aniston. She’s never succumbed to the rail-thin look, yet she has a rockin’ body. I also admire Sofia Vergarra.

And yes, I always nibble while I’m cooking! Sometimes it’s something sweet, sometimes savory. And oftentimes, I’m not hungry for dinner when it’s ready because I’ve been snacking too much. :-p

Calories are definitely a taboo topic, but they shouldn’t be! Thank you for being brave enough to talk about them and for sharing your story. You’re an inspiration to me!

  • http://www.cottercrunch.com lindsay cotter

good stuff woman! i’d eat all your eats. Keep them real, them tasty!! calories are good for those muscles. I think coconut eggnog won, ya?

  • http://www.nourish-and-flourish.net Sara Stewart

YOU inspire ME! I think you’re really wise to stay away from “calorie talk” until you feel 100% solid in your recovery. That was definitely the case for me. But you WILL get there…you’re already so far in your ability to be open about everything! And yes, it takes a true leap of faith. xoxo <3

  • http://www.nourish-and-flourish.net Sara Stewart

Definitely get your hands on some So Delicious nog! It will change your December. :)

And I LOVE Christina Hendricks! I also love her character in Mad Men.

  • http://www.nourish-and-flourish.net Sara Stewart

Jen Aniston and Sofia Vergarra are two of my favorites too!

I’ll try to get the recipe up in a few days. :)

  • http://www.nourish-and-flourish.net Sara Stewart

Yep, how did you guess? ;-)

I hope things are going well in NZ! xoxo

  • http://shannalikebanana.wordpress.com Shanna like Banana

Rock on with your muscle-y self girl :)

I may have just had a chocolate PB truffle before dinner. I was hungry (so was baby), what can I say?

Hmm fave healthy celebrity? Maybe Jen Aniston?

  • http://asdreamsbecomereality.blogspot.com Emily

Rock on, lady! This post is awesome. Talking calories can definitely be controversial at times but it’s necessary- and this post is extremely inspirational.
I always start my morning with jumping jacks and planks! Something about getting my body moving just energizes me for the day ahead. I’m glad I’m not the only crazy one!

  • http://veggiecouture.com Gina

Those oat bars look incredible! I need them in my life. I cannot WAIT to see you. So soon <3

  • Jessica @ Whatwouldjessicaeat?

    8 miles….woo! Way to go!!

  • http://twitter.com/MegLIBTF Meg Bailey

Great news Sara! I am so so glad for you. <3 I've never been a calorie counter because frankly, I find it incredibly boring. Sometimes I do feel strange talking about weight in my posts because I'd hate to have the wrong influence on someone. Most of the time I just talk about my bad habits and my efforts to make better ones!

LOVE the shoes, I just got a pair of patent nude heels that are similar to those. I've been debating getting some glitter heels… but I just don't know.

  • http://sweatlikeapig.com/ Tara @ Sweat like a Pig

I eat around the same amount of calories as you, but I never actually count them. Ugh. When I started weight lifting I gained 7 kilos! Some of it was fat, so I’ve lost about half of that weight but you need to gain to grow! Good job :)

  • http://www.nourish-and-flourish.net Sara Stewart

I’m glad I’m not the only crazy one too! ;-) Maybe I’ll add a plank to the mix tomorrow!

  • http://www.nourish-and-flourish.net Sara Stewart

Less than a week!! I’m going to book my bus ticket tomorrow, and will let you know when I’m arriving Wednesday. When will you be free to frolic in the city? xoxo

  • http://www.nourish-and-flourish.net Sara Stewart

Thanks! It was a doozy. ;)

  • http://www.nourish-and-flourish.net Sara Stewart

I think you should definitely get some sparkly heels! Then we can be twins on New Years! Speaking of which, do you have plans? I’m going to be in town!

  • http://www.nourish-and-flourish.net Sara Stewart

So true, you definitely need to gain to grow! It took me a LONG time to realize/accept that. Congrats on all your progress too!

  • Katie @ Peace Love & Oats

I get that ice cream too! Ironically though I buy it because it’s so low in calories I can eat the whole pint if I want to… Haha. You are very right about focusing on whole foods and not calories though! Even I need to remind myself that it’s about nutrients, not calories!

  • http://clairetherd.com/ Claire @ Live and Love to Eat

I could eat this way on a daily basis! Looking forward to the casserole recipe!

  • http://www.fashionfitnessfoodie.com Alyssakuminski

    So which one was better!?

I am excited to fnally meet you!!

  • http://glitzglamgranola.com/ Emily @ Glitz Glam Granola

This is such a wonderful post!! I love how you addressed the “elephant in the room” and said what works for you. I think that comparisons to one another happen so often that people forget that each person is different and each body is different- the important part is putting delicious, mostly healthy food in our bodies! And that zucchini thing looks FAB. Can’t wait for the recipe!!

  • S.

wow, I admire you…i still struggle with such confusion though…having to gain (forcing seems so freaking unnatural) + my age + NO exercise….its all wrong…i can’t stand it anymore. Just lost at times you know.

Your so positive, and extremely fit and healthy. Wow.

  • http://flopoodle.com Flopoodle

Love your positivity and just laying it out there! I am a little afraid of discussing calories, mainly because I have literally no idea how many I eat so it wouldn’t be accurate, and also because people tend to be very judgmental about things like that. I guess that shouldn’t matter, though, if I’m doing what works for me!

  • julie!!

hey lady!! i have plans to meet up with you guys next thursday night!! not sure what time or where you’re going to be but my plan is to come in from work!! woooo hooo can’t wait!!

  • http://healthifulbalance.blogspot.com/ Shannon (Healthiful Balance)

Your eats always look SO YUMMY! :) I started weight lifting a while ago and love it, it makes me feel so strong! :D I would like to start running sometime soon!

YES! I totally nibble on dessert while dinner is cooking!

  • http://runninglatemolls.wordpress.com/ Molls727

I love your blog! Just discovered it and I feel I have so much in common with you! Nice job on your 8 miler- that’s tough on a treadmill!

  • http://twitter.com/LiveLearnEat Live Learn Eat

Calories are necessary! No calories = no energy = dead = lame. :P I feel fine discussing calories, but I know people get offended sometimes, so you have to be careful. :P

I don’t really know how “healthy” any celebrities are…? I like Katherine Heigl and Selena Gomez – I hope they’re healthy!

And I try not to nibble on dessert while cooking dinner, otherwise all I want to eat is the dessert. I have such a sweet tooth!

  • http://www.nourish-and-flourish.net Sara Stewart

Hang in there. Things can and will get better for you. I just know it. <3

  • http://www.nourish-and-flourish.net Sara Stewart

Exactly! We’re all different, and should do what works best for US, not somebody else! :)

  • http://www.nourish-and-flourish.net Sara Stewart

Yayayayay! Can’t wait!! I think we’re going to a place called Stanton Social! Alyssa (Fashion Fitness Foodie) recommended it after she saw it featured on the Food Network!

  • http://www.nourish-and-flourish.net Sara Stewart

Don’t you just love the empowering feeling you get from lifting? I can’t believe it took me so long to jump on the strength training train!

  • http://www.nourish-and-flourish.net Sara Stewart

Thanks! I’m going to go check out your blog now. :)

Congrats on being abtastic! I love the all over effects of running…I just feel strong in general.

  • http://lifesabowl.com/ Allison

It’s been so long since I caught up with you! How have things been?! Everything sounds great :D Like you, I’m in one of the best places of my life I’ve ever been- emotionally and physically!

  • Sally

Yum…love those roasted brussel sprouts. Thanks for turning me on to them. And of course our favorite chocolate oat bars!! Can’t wait to see you in 3 days!!
