If you’re looking for a quick breakfast or lunch, TRY THIS. The simplicity of the dish allows the sweet caramelized onions’ and tangy goat cheese to shine. Your friends or family will be very impressed.
Adapted from Miss Dahl’s Voluptuous Delights
1-2 T. olive oil
1-2 cups Swiss shard, chopped
2 eggs
1/2 cup goat cheese, crumbled
Preheat oven to 350 degrees.
Spray two large ramekins with cooking spray. (You can also use one small baking dish, maybe 8 x 8). Heat the olive oil in a pan until hot. Add the onions and caramelize for 10-15 minutes, or until onions are soft and slightly brown (but be careful not to burn them!).
Take the pan off the stove and add the chard to the onions. Spoon onion-chard mixture into the ramekin. Carefully crack the eggs on top of the chard. (You may want to create a little “nest” so that the eggs have a place to sit.
Bake in the oven for 10-15 minutes, or until eggs are set. Crumble goat cheese on top and serve.
